Yummy banana bran bread

Here is a quick treat to prepare that you can enjoy with your cuppa or as a dessert with ice-cream/custard. It is pretty easy to make and absolutely tasty!

Ingredients

◆ 190g cake flour;

◆ 190 g self-raising flour;

◆ One-and-half teaspoon baking powder;

◆ 200g castor sugar;

◆ Half teaspoon salt; 

◆ 100g butter/margarine, melted;

◆ One cup bran flakes, lightly crushed;

◆ One egg;

◆ Three large bananas;

◆ One teaspoon lemon juice;

◆ One teaspoon vanilla essence;

◆ 300ml sour milk

Equipment

Mixing bowl, sieve, measuring cups, measuring spoons, measuring jug, loaf tin and wooden spoon.

Instructions 

1. Get your ingredients together. 

2. Preheat oven to 180 degrees Celsius/Gas Mark 3. Grease and line loaf tin with baking/wax paper and grease it also.

3. Mash the bananas in a bowl and sprinkle the lemon juice, set aside. This is to prevent the bananas from browning as well as to heighten their flavour.

4. Put sugar in a separate bowl and add salt. Sift flour and baking powder into same bowl. Add bran flakes and whisk gently until evenly combined. Make a well in the middle and set aside.

5. Put wet ingredients, that is melted butter/margarine, buttermilk, egg and essence in a jug. Beat until well combined.

6. Pour this mixture into the bowl with dry ingredients. Mix until just combined taking care not to over-mix.

7. Pour into prepared loaf tin. Bake in preheat oven for 45 min or until skewer comes out clean when inserted. Enjoy! — zimbokitchen
