COW heels (mazondo), together with beans, make a filling meal that also has hidden health benefits. The meal is rich in zinc and magnesium, among other benefits. These elements help boost the immune system. They also raise the levels of collagen in one’s body. Additionally, they improve brain function.

Cleaning the heels

There are two common ways of cleaning cow heels. One of them involves using boiling water, which is poured on the heels. A knife is then used to shave the hair off the hide.

However, the most common method involves placing the heels in an open fire to burn the hair and scrape it off with a knife.

They should be thoroughly cleaned afterwards and cut into small pieces.

Requirements

A large pot;

A pair of clean cow heels cut into pieces;

One to three chillies (medium size), optional

Salt to taste;

Ready-cooked sugar beans (with the necessary spices added)

Directions

  1. Place the cut heels in the pot and pour in water to just cover them.
  2. Boil until the juice thickens, add the salt, chillies and a cup of water. Boil until the salt and chillies blend with the stew.
  3. Pour in the sugar beans and simmer for five to 10 minutes.
  4. Serve the stew on its own or with a starch of your choice. Enjoy!
