BECAUSE of its nature, a free-range or roadrunner chicken needs more cooking time.
This will guarantee you a tasty and well-cooked dish.
Ingredients
Large pot;
One chicken cut into pieces;
50ml cooking oil;
Salt to taste;
One or two large tomatoes;
Chillies (two or three, or to taste);
One large onion;
Medium robot peppers (one of each);
Rosemary (optional);
Water or chicken stock
Directions
- Place the chicken in a pot with oil.
- Pour in two cups of water or stock and let it boil briskly. When you are done with the boiling, fry the chicken until it is golden brown.
- Add two more cups of water or stock and let it boil again and repeat step 2. Test for doneness and fry again.
- Blend the tomatoes, onion, robot peppers and chillies and add them in the pot. Stir them to your satisfaction.
- Put in the remaining water or stock and leave to simmer.
Serve with starch of your choice. Enjoy!
Cook’s notes: This chicken can be cooked on an open fire or stove. To reduce the cooking time, you can use a pressure cooker. — bigbite
