1806-2-1-CHICKEN AND SWEET POTATOESTHIS week, food blogger Mrs Anesu Kingori, a working woman by day and housewife by night, sent us a recipe for lemon and herb chicken, served with sweet potato wedges.

Being Zimbabwean and having married a Tanzanian she learnt ways to fuse cuisines. Hosting dinner parties for a multicultural crowd has resulted in her serving a special Sunday Dinner party with chicken and sweet potatoes, which are in season now.

Ingredients: (serves 4)

Eight chicken pieces, thighs and/or drumsticks because they have the best flavour;

Three to four teaspoon of Robertson’s Italian dried herbs;

Salt for seasoning to taste;

Freshly squeezed juice from one large lemon;

Three tablespoons of olive oil.

Sweet potato wedges, mixture

Eight sweet potatoes, washed, peeled and cut into wedges;

One teaspoon Rosemary Spice;

Two tablespoons olive oil;

Salt to taste.

Preparing the mixture

Lemon and herb chicken;

Marinating (in the morning);

1. Place defrosted chicken pieces in a dish that you can cover and fits in your fridge.

2. Rub the dried herbs and salt evenly on all the chicken pieces.

3. Add lemon juice and spread on all the chicken pieces to ensure that all pieces are well coated.

4. Cover the dish and marinate in the fridge for between 8-12hours —

NOTE: Make sure you keep the chicken in the refrigerator as chicken is susceptible to food poisoning bacteria if kept at room temperature for too long.

Cooking Instructions

1. When its cooking times, preheat your oven to bake (in a convection oven use bake with a fan) at 180 degrees celsius.

2. Place the marinated chicken in a greased flat baking tray and place in the middle tray of the oven.

3. Cook the chicken for 20 minutes and turn the chicken skin-side up.

4. After the chicken cooked for 20 minutes, in a separate tray, place the prepared sweet potato mixture wedges put in the oven as well.

5. Cook both the chicken and sweet potatoes for another 20 minutes until skin is golden brown.

6. You can turn up the grill, and heat to 200 degrees celsius for the last 5 minutes.
