Delicious oyster mushroom stew

THIS is a simple dish that you can whip up quickly on those days where you want an absolutely hassle-free protein to go with your meatless meal. I used oyster mushroom, but you can opt for any other type. I served the stew with some delicious and nutritious mupunga sadza and fried green vegetables.

Ingredients

Four punnets oyster mushroom;

One teaspoon garlic, grated;

One teaspoon salt;

One teaspoon curry powder;

Three large tomatoes, grated;

One medium onion, finely chopped;

50 millilitres water;

Three tablespoons ketchup sauce;

Five tablespoons oil

Directions

  1. Get your ingredients together. Cut the mushroom into medium-sized strips. Heat three tablespoons of oil in a pan and add the mushroom, salt and garlic. Fry until the mushroom begins to turn golden brown. Remove from the pan and set aside.
  2. Heat the remaining two tablespoons of oil in the same pan and add the onion and curry powder. Fry for about three minutes, stirring regularly.
  3. Add the tomatoes, ketchup and water, then mix. Return the mushroom to the pan, reduce heat and let this simmer gently on low heat until the stew is thickened to your liking. Taste for seasoning and adjust accordingly. — Zimbokitchen
