BRAAI RECIPE: Chicken kebabs with crispy salad

It is summer and in Zimbabwe the heat is unbearable, however, one advantage of this season is that it is suitable for outdoor activities, and lately there have been lots of braai parties aka gotchie-gotchie.
Here is something I modified from the Channel4 website for your summer gotchie-gotchie to have with crispy salad on a wrap. One word to describe this meal — yummy.

Ingredients
Two cloves of garlic, peeled and chopped;
Lemon zest and juice one lemon;
One pinch of smoked paprika;
One tablespoon olive oil;
Salt and white pepper;
Two chicken breasts, cut into two centimetre chunks.
Salad
One quarter white cabbage, finely chopped;
One quarter red cabbage, finely chopped;
One carrot, peeled and grated;
One large dill pickle, chopped.
Garlic sauce
150g low fat Greek yoghurt.
One clove of garlic, peeled and grated.
One tablespoon chopped parsley.
A squeeze of lemon juice.
Salt to taste;
Two whole meal wraps;
One tablespoon of chilli sauce.
Method
1. Mix together the garlic, oil, lemon, paprika and seasoning. Add the chicken and stir thoroughly to marinade for at least two hours in the fridge while covered.
2. To make the salad simply mix all the salad ingredients together.
3. To make the garlic sauce mix together the yoghurt, garlic, parsley, lemon juice and a pinch of salt.
4. When the grill is ready and hot. Thread the pieces of chicken on to two wooden skewers that have been soaked in water to not burn when grilled.
5. Lay the kebabs on to the griddle and cook for five minutes on each side or until cooked through. Lay the wraps on two plates and spread over the garlic sauce. Lay on a handful of salad, then top with the chicken and some chilli sauce and wrap up, remove skewers then have a delicious bite.
