Simple wonder of rock cakes

ROCK cakes — fresh from the oven — have them with tea.
Here is a great recipe to prepare them, which will be fun as well for children as they start learning to bake.
Ingredients

  • 225g self-raising flour;
  • 75g castor sugar;
  • One teaspoon baking powder;
  • 125g unsalted butter;
  • 150g of dried fruit mix/raisins;
  • One egg;
  • One tablespoon milk;
  • Two teaspoons vanilla extract.

Method
Preheat oven to 180 degrees Celsius.
Line a baking tray with baking parchment or brush with olive oil.
Mix the dry ingredients, flour, sugar and baking powder.
Using fingertips, rub in the cubed butter until the mixture looks like breadcumbs.
Mix in with a fork the dried fruit.
In a clean bowl, beat the egg and milk together with the vanilla extract.
Add the egg mixture to the dry ingredients and stir with a spoon until the mixture just comes together as a thick stiff lumpy dough.
Place golf ball size of the mixture onto a prepared baking tray. Leave space between them to allow them to rise and spread out during baking.
Brush the buns with a light coating of milk so they gloss when baked.
Bake for 15-20 minutes, until golden brown. Remove from oven and allow cooling for 5 minutes then turn them out to cool onto a wire rack. — BBC Food.
