Zimbabwean flair to ‘Gwaka Mole’ magic

A fortnight ago, Mr Nattver Patel, an advocate for the popularisation of the guacamole (Gwaka Mole) dish in Zimbabwe sent us a recipe.

The Guacamole is a Mexican dish that features predominantly the avocado, but each of the main food items on the recipe can be home grown.

A reader, who goes by the name of Joy, was so excited about this recipe and she sent us her Zimbabwean version, where one has to add a gaka (African horned cucumber) to the mix. She calls it “Emerald Gwaka Mole”.

Ingredients

Three medium avocados or four small ones;

One firm tomato, finely diced;

Half white onion or red onion;

Half-a-cup chopped coriander;

Two tablespoons fresh lemon or lime juice; (optional salt and pepper to taste).

One ripened gaka — African horned cucumber.

Method

Open the avocados and scoop out the flesh. An easy way is to cut length-wise around the pit and then using a chef’s knife, strike the pit and then twist the knife so you can easily remove the pit and scoop out the flesh.

Mash the flesh with a fork; it can still have hard parts, follow your preference.

Stir half of really ripened gaka into the mix.

Stir the other ingredients and spoon the rest of the gaka’s glowing green seeds over the top for garnish.

Serve them with tortillas, or as Joy would recommend, mealie-meal versions of tamales or fried stuffed polenta balls.
