RECIPE: Homemade Beef burgers with caramelised onions

BURGERS are easy to make and will leave your tummy and taste buds satisfied. This festive season, make juicy homemade burger patties with crunch and the caramelised onions using a recipe from the “Fresh Living Magazine”.
Ingredients: Serves 8
Caramelised onions:
Seven medium onions, peeled and sliced;
60ml dark brown sugar;
60ml aged balsamic vinegar;
One tablespoon chopped thyme.
Burgers
Eight Portuguese bread rolls, fresh;
Two packets rocket leaves;
125ml cherry tomatoes, halved.
Beef Patties:
800g extra lean beef mince;
One large onion, finely chopped;
60ml cocktail pickles, finely chopped;
60ml capers, finely chopped (optional);
125ml breadcrumbs, or oats;
One large egg, beaten;
One and half tablespoon beef stock powder;
One pinch of salt;
Non-stick oil cooking spray, and olive oil for frying.
Cooking Instructions
Mix all the ingredients for the beef patties until well combined;
Shape mixture into 8 patties, cover and allow to firm in the fridge;
Heat a little oil in a non-stick pan and fry the onions, over a low heat, until soft (about 10-15 minutes);
Add sugar and vinegar and stir until sugar has dissolved and mixture has thickened and caramelised for about 10-15 minutes and set aside;
Heat a little oil in a large pan and fry the burgers over medium heat until browned and cooked through;
Place all the ingredients on a platter and allow guests to build their own burgers.
