RECIPE: Barrie Hammond’s luxury lasagne

IMPRESS your guests this festive season with the delicious warming Luxury Lasagne recipe by Barrie Hammond, taken from “2001 Shearly Cripps Recipe Diary”.
The dish will certainly impress at the Christmas dinner party and moreover it will leave guests asking for more, the Oliver Twist style.
Ingredients (serves 12)
250g mushrooms, chopped;
250g bacon steak, chopped;
450g lean beef mince;
Two tins of tomato paste;
One tin whole tomatoes;
Half-cup of red wine;
One packet of lasagne flat pasta;
Three onions;
250g sliced ham;
250g cheese, grated;
450g sausage meat;
115g flour, sifted;
115g butter;
Lots of milk for cheese sauce;
Mixed herbs, salt and pepper;
One clove of garlic, chopped.
Method
1. Boil the pasta in salted water until soft.
2. Make a roux sauce with butter, flour, milk and half of the cheese, save the rest of cheese for later.
3. Fry the bacon pieces in little oil and add chopped onions, garlic, mushrooms, beef mince, sausage meat and mixed herbs. Mix together and cook stirring.
4. Add seasoning, salt and pepper to taste along with tomato paste, tinned tomatoes and red wine.
5. Oil a large baking dish and sprinkle the bottom with cheese, then add a layer of pasta, layer of meat sauce, layer of sliced ham, layer of cheese sauce and repeat until the baking dish is full.
6. Sprinkle the top layer with cheese and bake at 150-180 Degrees Celsius for 20 to 25 minutes.
Serve in slices with a green salad and green peas.
