Divine nyama choma from Zanzibar

HAPPY Valentine’s Day. There is nothing that says “I love you” better than a getaway to somewhere beautiful.

Think of the blue waters of Zanzibar, Tanzania. East Africa is well-known for its delicious street food. A personal favourite is barbeque kebab (nyama choma), served with “zege” or “chipsy mayai” a divine potato-egg omelette.

I sourced this recipe from my Tanzanian brother-in-law, Loti Kingori, who introduced me to the treat. So why not enjoy a braai with your loved one this Sunday with this easy and delicious dish.

Ingredients

Three to four medium-sized potatoes, skinned and cut into French fries-size;

Two eggs;

Cooking oil for deep fat frying;

Two tablespoons cooking oil for shallow frying;

Onions and bell peppers, chopped (optional);

Salt and pepper to taste.

Method

Fry the potatoes in oil until golden browned into chips, lightly salt while hot and set aside to drain oil.

Place enough chips to cover a medium size pan, add oil for shallow frying.

Heat the pan on medium heat.

Beat the eggs well (more or less can be used), with a pinch of salt and pepper and pour over chips.

If desired, other ingredients such as onions and bell pepper can be added to the eggs before pouring into chips.

Fry well, then flip by using a plate to place the omelette.

Fry the other side until satisfied. If well-cooked eggs are desired, flip again to ensure enough heat is applied.

Serve with “nyama choma” and East African salsa “kachumbari” and enjoy!
