Aunty Kuture’s fat cooks recipe

VET KOEKS (pronounced fat cook) are a quick affordable donut-like dessert for many.
Having them with a hot beverage reminds me of my childhood days visiting my grandmother in the rural areas.
The recipe has often been passed on verbally. I got Aunty Cathy Kuture to give me her deluxe vet koek recipe.

Ingredients:

Two teacups of self-raising flour;

Quarter teaspoon of baking powder;

Pinch of salt;

One egg;

One-and-half milk;

One tablespoon of sugar;

Oil for deep frying.

Method:
In a mixing bowl add the dry ingredients, flour, baking powder, salt and sugar and with a fork mix them well.

Beat one egg and add into the mixture.

Add milk bit by bit until the dough is a stiff dough.

Heat the deep frying oil in a deep pan until it is hot.

Use a table spoon to create scoops to add into the deep frying pan.

The vet koeks are ready when they are golden brown and fry floating on the oil.

Remove from pan and cool them on a paper towel to drain the oil.
