Chef George of KITCHEN Champion Zimbabwe’s Barbeque sticky chicken recipe is a delicious crowd pleaser

Nothing defines summer more than a delicious chicken in a sticky sauce.

This week Chef George of Kitchen Champion Zimbabwe sent us one of his free recipes, Barbeque, from the upcoming Zimbabwean recipe book, 20 Quick and Easy Family Recipes.

Ingredients (Serves four)

One and half kilogrammes of defrosted chicken pieces

100g onions

Finely chopped 80ml olive/vegetable oil (20ml for roasting)

One green pepper, chopped

Half teaspoon white vinegar

150ml tomato-sauce

30ml Worcestershire Sauce

Half a teaspoon of salt

Two tablespoons mango chutney

One teaspoon white pepper

Cooking instructions

1. Pre-heat oven to bake at 180 degrees Celsius — 200 degrees Celsius.

2. Place the chicken pieces in a roasting tray, rub all the pieces evenly with 20ml of the olive oil, salt and pepper.

3. Place tray in the oven and cook for 20 minutes.

4. Meanwhile, heat the remaining oil on medium heat in a saucepan and fry the onions until they are golden brown, for about five minutes.

5. Add the green peppers to the saucepan and fry for another five minutes.

6. Then add the tomato sauce, vinegar, and Worcestershire Sauce and mango chutney.

7. When the chicken has finished cooking, place it into the saucepan and cook for another 10 minutes to make sure that it has no blood when poked.

8. While cooking, baste the meat with the sauce occasionally and serve with fresh chips or spicy rice and a salad.
